Stuffed Tomato
Ingredients
Tomato – As per desired quantity
Desiccated Coconut (fine) – 250gm
Peanut – 100gm
Sesame seeds – 50gm
Sea salt – as per taste
Lemon Juice – 2-3 tbsp
Coriander – Handful
Turmeric – 1 tsp
Jaggery – 50-75gm (depends on sweetness)
Cumin seed powder (Optional) – 1½ tbsp.

Directions
- Wash and cut tomato in half. Remove little bit of the core of tomato by using Melon baller or any spoon but keep moist in there.
- For Stuffing: Finely chop fresh coriander and keep aside. In a grinder (use small chutney jar) to crush peanut and sesame seeds to medium fine consistency. Transfer this in a bowl. Add desiccated coconut and lemon juice, sea salt, turmeric, finely chopped coriander, Cumin powder and Jaggery. Mix everything well.
- Fill tomatoes using this prepared stuffing. You can store the stuffing in a glass container in a fridge for a week.
- Serve Immediately.
